Analysis of concepts regarding the role of both food and culture specific to diet and chronic disease associated with diverse global populations and in the United States. Exploration of the holistic perspective of functional foods and principles of nutrition, metabolism, the role of food choices, microbiome and gut health associated with health, development of chronic disease and prevention. Discussion of current trends, theories, practices, research and controversial topics.
